Mexico Monday takes us to a cooking class with Patsy outside of San Miguel.
we used all the freshest ingredients...roasting tomatillos, peppers, tomatoes and nopales
no Cuisinart for us...
and this little delicacy...huitlecoche, basically rotting corn kernels...has an earthly, mushroom like flavor when sauteed with onion and garlic.
Patsy's a real character and her kitchen 'casa' is filled with art, a huge cooking island that easily accommodated all of us...
as well as plenty of room to gather together and enjoy our creations.
I've heard of huitlecoche but have never understood exactly what it was, THANK YOU for photographing and explaining this! Beautiful.

I just love the colorful kitchen. I'm thinking of redoing my kitchen soon, at least the walls. Right now it's like a manglo and the trim is a pea green. Time for change. Everything looks good and using the molcaquete (I think I have the right spelling, maybe not) is the best. I have 4 of them. One from my father, my mother and the other two are mine. :) Thanks for the excellent Mexico Monday post and I hope you enjoyed the dish. Looks good.

When we stayed in Mexico we ate very well, though I can't say that we ate any huitlecoche nor we were as fortunate to have such an impressive cooking lesson as you had by Patsy. I am salivating over your images:)
